Herring Salad

1/2 Cup Pickles
1/2 Cup Pickled Herring
1/2 Cup Beets
1/2 Cup Apples
1/2 Cup Pork, Beef, or chicken
1/2 Cup Diced cooked pototoes

Salt, pepper and mayo to taste. All ingredients chopped and peeled. Use equal amounts to equal size needed, in otherwords if you want 3 Cups of Herring Salad you would use 1/2 Cup of each of the six ingredients.

Potato Salad

5 lbs Potatos 
7 1/2 TBS Sugar
3 1/2 Tsp Salt
4.8* oz Vinegar
6.4* oz Water
1/2 Onion

Cook potatos, peel while still hot using a lint free towel to hold. Cut into slices. Meanwhile add Sugar, Salt, Pepper, Vinegar, Water and Onion into a blender and blend. Once potatos are finished add liquid.

For German Potato Salad add Butter, Bauers Mustard (dab) and Bacon.

For regular Mayonnaise Potato Salad add mayonnaise. I like to make a big batch of this during the summer. I let it sit in my refrigerator in the brine and add mayonnaise just to the quanity I need at that time. Also the longer the potatos sit in the brine the better tasting it is. I strongly recommend at least one day in the brine before serving as Hot or Cold German Potato Salad.

  • the amount of ingredients might be strange but I had to adapt my Mom's (Bertha von Hassel) recipe from 50 lbs of potatos.

Hot Potato Salad

9          medium Potatoes (peeled and boiled)
12        slices Bacon (cut in pieces)
1 1/2   cups chopped Onion
1/2      cup flour
2          cups water
1 1/4   cups vinegar
1/2      cup sugar
3-4      eggs
1          tablespoon minced Parsley
some celery seeds
Salt and Pepper to taste ( 2 teaspoons salt - 1/4 teaspoon pepper)
  1. Cook potatoes, drain.
  2. Dry potatoes by shaking pan over low heat.
  3. Fry bacon, drain and reserve some grease.
  4. Combine Onions, potatoes, eggs, parsley, celery seeds in bowl.
  5. Heat the reserved bacon grease and stir in flour.
  6. Heat until bubbly
  7. Add water, vinegar, sugar, salt and pepper and cook until smooth and thickened.
  8. Pour over potato mixture

Cucumber Salad

6 Cucumbers
Salt lightly
1 Quart Vinegar
1 1/2 C Sugar
1 Tsp Oil
Chopped Onion

Add cucumbers to brine and let sit; the longer the better.
