[edit] Herring Salad
1/2 Cup Pickles 1/2 Cup Pickled Herring 1/2 Cup Beets 1/2 Cup Apples 1/2 Cup Pork, Beef, or chicken 1/2 Cup Diced cooked pototoes
Salt, pepper and mayo to taste. All ingredients chopped and peeled. Use equal amounts to equal size needed, in otherwords if you want 3 Cups of Herring Salad you would use 1/2 Cup of each of the six ingredients.

5 lbs Potatos 7 1/2 TBS Sugar 3 1/2 Tsp Salt pepper 4.8* oz Vinegar 6.4* oz Water 1/2 Onion
Cook potatos, peel while still hot using a lint free towel to hold. Cut into slices. Meanwhile add Sugar, Salt, Pepper, Vinegar, Water and Onion into a blender and blend. Once potatos are finished add liquid.
For German Potato Salad add Butter, Bauers Mustard (dab) and Bacon.
For regular Mayonnaise Potato Salad add mayonnaise. I like to make a big batch of this during the summer. I let it sit in my refrigerator in the brine and add mayonnaise just to the quanity I need at that time. Also the longer the potatos sit in the brine the better tasting it is. I strongly recommend at least one day in the brine before serving as Hot or Cold German Potato Salad.
- the amount of ingredients might be strange but I had to adapt my Mom's (Bertha von Hassel) recipe from 50 lbs of potatos.

[edit] Hot Potato Salad
9 medium Potatoes (peeled and boiled) 12 slices Bacon (cut in pieces) 1 1/2 cups chopped Onion 1/2 cup flour 2 cups water 1 1/4 cups vinegar 1/2 cup sugar 3-4 eggs 1 tablespoon minced Parsley some celery seeds Salt and Pepper to taste ( 2 teaspoons salt - 1/4 teaspoon pepper)
- Cook potatoes, drain.
- Dry potatoes by shaking pan over low heat.
- Fry bacon, drain and reserve some grease.
- Combine Onions, potatoes, eggs, parsley, celery seeds in bowl.
- Heat the reserved bacon grease and stir in flour.
- Heat until bubbly
- Add water, vinegar, sugar, salt and pepper and cook until smooth and thickened.
- Pour over potato mixture

[edit] Cucumber Salad
6 Cucumbers Salt lightly 1 Quart Vinegar 1 1/2 C Sugar Pepper 1 Tsp Oil Chopped Onion
Add cucumbers to brine and let sit; the longer the better.
